Gnuplot is free and fairly easy to learn. R is free but the learning curve is scary Mathematica is a commercial package but capable of amazing feats Octave is an open source equivalent of Matlab

I'm not sure what i know you're talking about (how did soils come into the picture) but try gnuplot
